By Hello Happy I appreciate how this book shows how to make enjoyable and authentic Italian food — without pasta, bread, or other gluten sources. It is also a beautifully designed and photographed book. The soft-bound, full-color book begins with several “starters,” including info about Italy, the Paleo lifestyle, how to set up your kitchen, and numerous cooking tips.The recipes include basics, sauces, condiments, appetizers, salads, brunch, Tuscan favorites, soups, stews, meat & poultry, seafood, sides, and (my favorite!) desserts. There is also a section of pasta dishes which use vegetables to replace pasta, such as Spaghetti Squash Puttanesca, I love this recipe for using one of my favorite veggies.My favorite recipe overall is probably the sole piccata, which is fantastic, yet is easily made and works well for a variety of different fish. I also made the Tuscan vegetable and herb-baked omelette for a my family and I’ve also tried the Osso Bucco, but with a less expensive cut of meat. Both were delicious! Such a beautiful book, with many authentic recipes from Italy that anyone (paleo or not) would enjoy.

I was a little nervous about trying this cookbook - I wanted to find some healthy recipes that were gluten free - and I'm not Italian. I just like Italian food and I loved the Cyndy's Table book so I thought I'd give it a try. To my pleasant surprise, the recipes are easy to follow. The book is arranged in such a way that you can read up front and get your basic shopping done that covers most recipes (except for the main ingredient of course). And, there are definitions/descriptions of Italian ingredients for us non-Italian fans. Using this cookbook will make you a success at creating healthy Italian meals. Even I was able to make the basic marinara and bolognese. A few of my favorites included the Acorn Squash stuffed with Chicken Loaf, Chicken Scaloppine in Lemon-Caper Sauce, Salmon with Lemon Capers and Thyme, Butternut Squash Lasagna, Spaghetti Squash with a Chicken Ragu, Zucchini Fritters and the Meaty Italian Frittata. I marked many more recipes to try - so many sound delicious - and easy. If I can follow this cookbook with success anyone with a kitchen and stove can too.
